Cherries are handpicked at peak ripeness, transported promptly to the wet mill, and soaked to remove floaters before undergoing pre-drying. They are then meticulously dried on patios or African beds for about 20 days, with daily quality checks. The estate emphasises sustainability, selective varietals, and integrated pest management, using Brix analysis to ensure optimal harvest timing for peak ripeness and sweetness.
