In this lot, the cherries are washed to select only the ripest, they then go through a 48-hour dry aerobic fermentation, thermal shock, and then a 179-hour anaerobic fermentation in water, finishing with slow drying on raised beds for 21 days. With a highly aromatic cup, you will taste pineapple juice and yellow citric fruits with a hazelnut finish.
