Stretching across the Apaneca Mountain Range, the Escobar Family has been plating coffee for five generations. Soil is volcanic; from the Ilamatepec Volcano, cherries are handpicked and put in air-tight tanks locking out oxygen for five days during the fermentation phase to accentuate flavours otherwise not observed. It is then spread across raised “African beds” for drying. This coffee will give the cup a piquant citric acidity, juicy mouthfeel and raw sugar sweetness.
